Okra and Summer Squash

Okra gets a bad rap. It gets miss-cooked and turns slimy, or it gets battered and dunked in the fryer. Though delicious, not a good use of the nutrients there friends. So here’s something yummy you can do with okra that’s actually good for you.

1 TB EVOO

1/2 lb okra, washed and sliced in half the long way

1/2 lb summer squash, yellow crookneck is perfect, sliced into 1/4 inch rounds

1 pint grape tomatoes, halved

hand full of fresh chopped basil

1 TB freshly ground black pepper

1 tsp salt

1 lemon, sliced in wedges

parmesan cheese (optional)

Heat oil in skillet on medium high. Add okra and squash together and saute. When squash is crisp tender (4 minutes), add tomatoes and basil. Saute 1 minute. Add pepper and salt. Stir.

Serve over pasta, couscous, quinoa, or rice with lemon wedges and cheese.

The okra is cooked so quickly, it doesn’t get slimy.  It’s still a little crisp and holds its mild green flavor.

This is CHEAP and healthy and FAST! A 10 minute meal!

  1. I found this recipe searching for something to make with squash and okra I got from the farmer’s market. It was DELICIOUS! I left out the tomatoes because I don’t like them raw so I didn’t have any, but I added about a tbsp of picante sauce for color and liquid, and a little garlic and onion because I like those things. Thanks for the idea! I’ll use it again and again!
