Rescue remedy for near-rotten bananas! Speckled bananas, this is love.
1 stick quality butter substitute but not shortening
1/3 Cup raw sugar
1/2 Cup tapioca flour
1 Cup rice flour
2 tsp baking powder
2/3 Cup sunflower seeds (I like the salted ones)
Preheat oven to 375 degrees F.
Put butter substitute and bananas in your stand mixer and whip until fluffy. Add in sugar, flours, and baking powder. Mix to incorporate fully.
Pour into silicon baking dish or greased and floured metal loaf pan. Sprinkle top with sunflower seeds. Bake 30 minutes, until seeds begin to toast. Remove from oven. Cool in baking pan. Wait about 5 minutes before cutting.
I serve it with ice cream!
