ALWAYS use Yukon Gold Potoates for mashing. They have just the right starch and buttery flavor.
This recipe calls for 8 oz or more of bleu cheese depending on your taste.
Wash 6 potatoes a little smaller than the size of your fist. Cut them in quarters and place them in tepid water. Always heat potatoes and water together. Cover and boil for 12 minutes or until fork tender.
Drain potatoes in strainer. Drain them well!
In your stand mixer bowl add
1/2 cup milk
1 TB lemon juice
1 TB salt
1 TB black pepper
2 TB butter
Fit mixer with cake batter K paddle. Stir on low until incorporated. Add 6 oz bleu cheese crumbles. Stir to incorporate. Top with remaining cheese to serve.
